Email is inherently leaky metadata-wise, but onion-accessible email providers reduce exposure at the network layer. They let you send and receive mail without revealing your IP to the provider. Some offer end-to-end encryption; most at least offer TLS in transit. Remember: email metadata (who you write to, when, how often) is almost always visible to the provider regardless of encryption.
